*Base recipe adapted from 'Best Ever Muffins' recipe.
INGREDIENTS:
2 cups Flour
3/4 cup Sugar
3 tsp Baking Powder
1/2 tsp Salt
1 Egg Replacer (Ener-G or Flax Eggs)
1 cup Soy Milk (or other milk alternative)
1/4 cup + 2 heaping tbsp Applesauce (or 1/4 cup oil)
1/4 cup Mixed Berries
1/2 Apple, peeled, cored and chopped
1 tbsp Vegan Margarine, melted
4 tbsp Flour
4 tbsp Brown Sugar
4 tbsp Oats (or crushed nuts)
Sift flour, sugar, baking powder and salt in a large bowl. In a small bowl, combine egg replacer, soy milk and applesauce (or oil). Add wet to dry and stir just enough to combine all ingredients. Divide batter into two equal parts. Add the berries to one bowl and the apple to the other. Scoop batter into greased muffin tin/papers. Meanwhile, combine melted margarine with 4 tbsp each flour, sugar and oats/nuts and crumble that mixture on top of the apple muffins. Bake at 400F for 25 minutes or until golden brown. (375F convection will also work or 400F convection for 15-20 minutes)

Sunday Brunch: Corn Muffins
This recipe was from my mother's file, with minor adjustments for veganism.

INGREDIENTS:
1 cup Flour
1/2 cup Sugar
1 tbsp Baking Powder
1 tsp Salt
1 cup Cornmeal
1/2 cup Margarine
1 Egg Replacer
3/4 cup Soy Milk
Preheat oven to 375F.
Combine dry ingredients except cornmeal, then gently stir in cornmeal. In a separate bowl, combine the rest of the ingredients and beat until margarine is in small chunks. Mix wet and dry and stir until just mixed. Spoon into greased muffin tin to about 2/3 full, bake for 15-20 minutes or until knife comes clean and top is lightly golden.

Sunday Brunch - Tropical Muffins

Ingredients:
2 cups flour
1 cup Sugar (1/2 brown 1/2 white)
3/4 cup Margarine, melted
1 or 2 Very Ripe Bananas
1/4 Large Papaya (approx. 1 small)
2 Kiwis
1/2 cup Flaked Coconut
2 Egg Replacers
1 1/2 tsp Baking Soda
1 tsp Vanilla
1/2 tsp Salt
Preheat oven to 375. Mix together flour, baking soda and salt in a large bowl. Mash banana in a separate bowl and blend together kiwi and papaya until mostly smooth. Add together all fruits with margarine, sugar, egg replacer and vanilla. Add that entire mixture to the dry ingredient bowl and combine until just mixed. Add in Coconut. Scoop mixture into lined or lightly oiled muffin tins, up about halfway of the cup. Bake for 15-20 minutes, until fork comes out clean!
*optional - I didn't have any, but top with, or add in a 1/2 cup of crushed macadamia nuts for a real tropical feel.
