Sunday Brunch (Gluten-Free February) - GF Pancakes



INGREDIENTS:
1 1/4 cup Rice Flour
2 tsp GF Baking Powder
1 tsp Baking Soda
Dash Salt
1 1/4 cup Soy Buttermilk (add 3 1/2 tsp Lemon Juice to 1 1/4 cup Soy Milk)
2 Egg Replacers (Ener-G is Gluten Free)
1/4 Cup Vegetable Oil


Mix dry ingredients in a large bowl. In a small bowl, beat eggs and mix in other liquids. Mix all together until lump-free and cook in a non-stick pan over medium-low (or on a large griddle).
